Prevent unsupported characters from being saved in PeopleHR

It is currently possible to add unsupported characters to fields throughout PeopleHR including the logbook, such as square brackets etc. this can cause issues such as preventing Employee record creation. It should not be possible for unsupported characters to be typed and saved on any fields where it could then cause a problem.
