Remove character restrictions from the employee details capture pop up fields

The details capture pop up is fantastic, but it has a weird quirk that some symbols are restricted from being used, the one that causes issues is '-' being restricted from address fields. Welsh addresses very commonly have dashes, it makes no sense to restrict them, and the system doesn't make it clear that the issue is the dashes either, it just won't let you progress with them. This results in incorrect addresses with spaces instead of dashes, and annoyed users entering the system for the first time.

Just remove the character restrictions and allow people to input their info as they see fit, HR admins shouldn't have to be going in afterwards to put the dashes back in (which makes no sense that its fine when done by an admin, and not allowed when input by the employee).
