For those who have admin access, it is useful to see which of our staff have tasks assigned to them, how many tasks they have outstanding, what the tasks are, who they relate to, etc.

I completely agree with this, especially when we have identical tasks going out to multiple people - to see the 'Assigned to' field in the tasks list would be very useful. At the moment I have to open each task to check who is yet to complete the task rather than just glancing at the list
it's also useful when someone is off sick, or has a long term absence to be able to search on which tasks are assigned to them
